Recipe:Popcorn Cauliflower & Garlic Aioli Dip

Crispy, delicious and vegetarian! T Great as a snack or to serve at a party, these will be the star appetiser of the night.

Step 1: INGREDIENTS

SERVES 2-3 | PREP TIME 25 MINS | COOK TIME 16 MINS

POPCORN CAULIFLOWER:

Adapted from Let's Be Vegan Oven Fried Popcorn Cauliflower Bites

  • 1 head of organic Cauliflower broken into bite size pieces
  • 1 cup of All Purpose Flour
  • 1 cup of Water
  • 1 organic Egg
  • 2 teaspoons of Paprika
  • 1 teaspoons of Garlic Salt
  • 2 teaspoons of Onion Powder
  • 1 teaspoon of Salt
  • 1/2 teaspoon of Pepper
  • 1 1/2 cup of Corn Flake Crumbs
  • 1/2 teaspoon of Lime Juice
  • 1/2 teaspoon of Lemon Juice
  • Olive Oil

GARLIC AIOLI DIP:

  • 1/2 cup of organic Mayonnaise
  • 1 teaspoon of Paprika
  • 5 garlic cloves finely minced
  • 1/2 teaspoon of Lime Juice
  • 1/2 teaspoon of Lemon Juice
  • 1/8 teaspooon of Pepper

Step 2: INSTRUCTIONS

POPCORN CAULIFLOWER

  1. Prepare ingredients as listed above
  2. Preheat oven to 375 degrees
  3. On a baking sheet with parchment paper, coat it evenly with Olive Oil
  4. In a bowl, pour flour, water, garlic salt, onion powder, paprika and egg. Mix well to create Wet Mixture
  5. In another bowl, mix corn flake crumbs, salt and pepper to create your Dry Mixture
  6. Dunk cauliflower pieces into Wet Mixture first to coat. Then dunk pieces into Dry Mixture until well covered
  7. Transfer coated pieces to baking sheet and disperse them
  8. Bake for 16 minutes on top tray of oven
  9. Remove from oven and squeeze lime and lemon over the popcorn cauliflower
  10. Serve with your dip

GARLIC AIOLI DIP

  1. Prepare ingredients as listed above
  2. Mix together mayonnaise, lime and lemon juice, garlic, paprika and pepper
