In my house this week we have been on a mission to eat everything in the cupboards, in an attempt to significantly reduce our food waste. We've been using the SuperCook website to find delicious recipes. If you haven't already seen this amazing website I highly recommend checking it out.
You simply type in the ingredients you have on hand and the website showcases all the meals you can cook. We have been eating a lot of curries... and I was craving a pop of something fresh and light to spice things up a bit. That's when stumbled on this delicious mango and avocado salsa recipe and I'll admit, I'm addicted.
- 1 hass avocado, diced
- 1 mango, peeled and diced
- 1/2 cup peeled, diced cucumber
- 1 tablespoon finely chopped jalapeno
- 1/3 cup diced red onion
- 1 tablespoon lime juice
- 1 bunch of roughly chopped cilantro leaves
- 1 teaspoon of ground cumin
- Salt and pepper
Optional - include black beans or chickpeas for a protein punch.
It's so easy! Just chop and dice all the ingredients to a similar size, season with with the lemon juice and ground cumin.
