I've been living in Brazil for about a year and a half now, and have come to love many of the foods that are common here. I knew about Heart of Palm in Australia, but I never thought to cook something with it. Well, things have certainly changed.
I consumed so much Heart of Palm, or Palmito as its more commonly known in Brazil, when I first arrived here, that I had to take a break for a little while to not get food fatigue (you know when you eat something continuously and then you end up not liking it).
But break's over, and this delicious summer salad is a wonderful addition to any meal.
If you're wondering, Heart of Palm is a vegetable harvested from the inner core of certain palm trees. The taste sort of resembles the flavour of an artichoke. Next time I make this salad, I would like to try adding avocado to it.
Brazilian Summer Heart of Palm Salad with Tomatoes
Ingredients
- 250g pack cherry tomatoes, halved
- 400g can/jar Hearts of Palm, sliced
- 2 spring onions, sliced
- 1 tablespoon red wine or balsamic vinegar
- 3 tbsp olive oil
- large handful flat-leaf parsley, chopped
Directions
- Mix together the hearts of palm, tomatoes, spring onions and parsley.
- Whisk together the vinegar and olive oil.
- Drizzle over the salad, toss everything together and serve.
