Recipe: Melon Ball Punch

This melon ball punch is the perfect non-alcoholic drink for summer - refreshing and slightly sweet with lots of fizz! I almost want to keep a pitcher in my fridge at all times.

If you wanted to add alcohol, I bet it'd be great with a bit of coconut rum or some white wine.

Ingredients + tools

  • watermelon, honeydew, or cantaloupe melons
  • 1 liter ginger ale
  • 6 oz can pineapple juice
  • fresh mint
  • fresh lemons or limes (I like limes more with this mix!)

You'll also want to make sure you've got a melon-baller, some parchment, and a baking sheet on hand.

Method

Ball the melons: I used the smaller end of the melon baller so I could get more from each melon. I also tried using other fruits with the melon baller but didn't have loads of luck - save yourself some frustration and stick to melon. If you want extra point for zero-waste you can keep the watermelon rind and use it to make a crunchy pickle.

Next, place the melon balls on baking/parchment paper and freeze until rock hard. We left ours overnight but they'd probably be ready in a few hours.

Mix it up: You'll need 1 litre of ginger ale (ginger beer if you want to make it alcoholic) and a 6 oz or 200ml can of pineapple juice.

Take a handful of mint leaves and throw them into the pitcher. Then add about half of a lime cut into thin slices. Add a little of the ginger ale and use a wooden spoon to muddle the mint and lime a bit. Then add in the rest of the ginger ale and the pineapple juice and give it a stir.

Once that's done, drop in your frozen melon balls. For one pitcher I used 45 melon balls.

Set the rest of the melon balls aside to use as ice cubes in the glasses!
