Easy planet strong breakfast on the go

Do you find yourself dashing out the door during the week, only to realise you have forgotten to eat breakfast?

It happens all too often and for many, a quick alternative is normally something that will come pre-packaged in plastic and will not sustain you for the day. These vegan flax-bars are planet-strong and package-free! Give them a go this weekend and have some ready to go for the week ahead.

Say ‘NO’ to wasteful packaging, plastic bags and bottled water

Estimated CO2 Saving: 13kg per month (150kg per year)

Reject or cut back on these bad-for-the-environment items: over-packaged products, non-recyclable packaging, plastic bags and bottled water when tap water is available.

Ingredients:

- 1/4 cup of almond flour - 1⁄2 cup pecans - 1⁄4 cup almonds -  1⁄4 cup flaxmeal - 2 Tbsp. hemp seeds - 2 Tbsp. coconut oil - 1/4 cup tahini - 1 tsp. stevia - 1 tsp. cinnamon

Method:

-  Place the almond flour, pecans, almonds, flaxmeal, hemp seeds, 11⁄2 tablespoons of the coconut oil, 2 tablespoons of the Tahini, and 1⁄2 teaspoon of the stevia in the food processor and process until combined but still a little chunky (be careful not to over process or you’ll end up with nut butter!).

-  Preheat the oven to 176/C. Form the bars on a baking sheet lined with parchment paper, and bake for 8 minutes. Then, flip and bake for another 8 minutes. Remove from the oven and allow to cool on a wire rack.

-  Meanwhile, whisk together the remaining 1⁄2 tablespoon of coconut oil, 2 tablespoons of tahini, 1⁄2 teaspoon of stevia, and the cinnamon. Spoon on the top of the bars as "icing".
