Chewy No-Bake Muesli Bars

I love this easy no-bake recipe! It's an especially great way to use up food items you might have at home which have nearly run out. When I looked in my cupboard the other day, I had small quantities remaining of almonds, shredded coconut and muesli. It can be difficult to use up small quantities sometimes, but not with this great recipe. I gathered these ingredients together along with a few other things I had in the cupboard and turned them into no-fuss, no-bake, healthy bars. Making homemade muesli bars is much better then buying them at the store. Firstly because you're in control of the ingredients, which means no chemicals or other harmful additives get included, and secondly it means no packaging. They're a great idea for work or school lunches too.

Chewy No-Bake Muesli Bars

Ingredients

  1. 3/4 cup almond butter (or peanut butter, sunflower seed butter, or your favorite nut butter)
  2. 1/2 cup honey
  3. 1/2 cup coconut oil
  4. 1 1/2 cup muesli (or rolled oats)
  5. 1/4 cup almonds, crushed
  6. 1/4 cup coconut, shredded
  7. 1/4 dark chocolate, crushed
  8. 1 tablespoon chia seeds

Directions

  1. 1. In a medium pot set over medium-low heat, melt together nut butter, honey, and coconut oil, stirring until smooth.
  2. 2. Remove from stove and stir in muesli, almonds, coconut, chocolate and chia seeds.
  3. 3. Pour mixture into a rectangular baking dish. Spread into an even layer, and firmly press down with the back of a spatula or clean hands.
  4. 4. Refrigerate for 2 hours or until firm. Slice into bars and remove from pan.
  5. 5. Store the bars in the fridge in an airtight container.

Makes 6 - 8 bars.
