Dairy Free Recipe: Cake Batter Ice Cream using frozen overripe bananas

This is the follow up post to our first overripe banana recipe - Unbeatable Banana Bread . Overripe bananas (yes I mean the really soft and dark ones) do not need to go to waste! There are MANY things you can do with them, besides from make banana bread.

Once they start to turn black, freeze your bananas. You can then use them in smoothies, or in this delicious recipe for Dairy Free Banana Cake Batter Ice Cream . It's healthy, low fat, fast and easy to make, with no ice cream maker required! Enjoy!

Banana Cake Batter Ice Cream

  • 5 frozen bananas (peeled and chopped)
  • 2 tbsp. pure vanilla extract
  • 1 tsp. butter extract
  • ¼ tsp. almond extract
  • ¼ tsp. maple extract (optional)
  • ¼ tsp. baking soda
  • 2 tbsp. agave or maple syrup or honey
  • 2 tbsp. sprinkles

In a food processor, process frozen bananas until smooth.

Add extracts, baking soda, and agave and pulse until combined. Add sprinkles and pulse once or twice just to combine.

Serve immediately or store in the freezer.

Serves 4
