World Environment Day recipe series: Maeve O’Meara’s Mexican Guacamole

This World Environment Day’s theme is Think:Eat:Save . Australians waste over 4 million tonnes of food a year, or nearly 180kg per person. We need to make people conscious of the impact this waste is having on our environment.

The UNEP Website explains:

Roughly one third of the food produced in the world for human consumption every year — approximately 1.3 billion tonnes — gets lost or wasted.

Food loss and waste also amount to a major squandering of resources, including water, land, energy, labour and capital and needlessly produce greenhouse gas emissions, contributing to global warming and climate change.

First up this week:

Maeve O’Meara’s Mexican Guacamole

Ingredients:

3 ripe avocados

½ fresh jalapeno chilli (optional) finely chopped

2 tsp coriander, chopped

1 tomato, diced

A little chopped red onion

Juice of ½ a lime

1 Tsp Salt

Method:

Halve the avocados, remove the seeds and use a spoon to scoop the flesh into a bowl.

Add the chilli, coriander and onion.

Mash together with a fork, gently fold in the tomato, lime juice and salt.

Season to taste.

Think:Eat:Save tip : Guacamole should be made just before serving, but adding the seed of the avocado will keep the guacamole green.
