It happens all too often and for many, a quick alternative is normally something that will come pre-packaged in plastic and will not sustain you for the day. Ingredients:
- 1/4 cup of almond flour - 1⁄2 cup pecans - 1⁄4 cup almonds - 1⁄4 cup flaxmeal - 2 Tbsp. hemp seeds - 2 Tbsp. coconut oil - 1/4 cup tahini - 1 tsp. stevia - 1 tsp. cinnamonMethod:
- Place the almond flour, pecans, almonds, flaxmeal, hemp seeds, 11⁄2 tablespoons of the coconut oil, 2 tablespoons of the Tahini, and 1⁄2 teaspoon of the stevia in the food processor and process until combined but still a little chunky (be careful not to over process or you’ll end up with nut butter!).
- Preheat the oven to 176/C. Form the bars on a baking sheet lined with parchment paper, and bake for 8 minutes. Then, flip and bake for another 8 minutes. Remove from the oven and allow to cool on a wire rack.
- Meanwhile, whisk together the remaining 1⁄2 tablespoon of coconut oil, 2 tablespoons of tahini, 1⁄2 teaspoon of stevia, and the cinnamon. Spoon on the top of the bars as "icing".
