Vegan choc-peppermint patties

This planet strong treat is the perfect way to cool down in the hot summer.

We recently had my sister-in-law over for dinner and she made these amazing treats! There was about 20 of them and we ate every single one in about ten minutes.

Ingredients:

  • 1/2 cup raw cashews, soaked
  • 1/2 cup coconut oil, melted
  • 3-4 tablespoons agave nectar or stevia, to taste
  • 2 tablespoons nut milk
  • 1 teaspoon of organic peppermint extract
  • 3/4 cup dairy-free, dark chocolate chips
  • 1/2 tablespoon coconut oil, not melted

Directions:

  1. To soak the cashews, put them into a bowl and cover them with water. Leave to soak over night, then blend the next morning into a smooth paste.
  2. Put the paste, the melted coconut oil, the sweetener, the nut milk, and peppermint extract into a high-speed blender. Mix until completely smooth.
  3. Line a baking sheet with parchment paper and grab mini cupcake/candy liners. Add a half tablespoon of filling intoeach liner. Freeze, uncovered, for 20-35 minutes, or until firm to the touch.
  4. When frozen, pop the patties out of the cupcake liners and set each on top of their allotted liner. Return to the freezer for 10 minutes.
  5. While that's happening, melt the chocolate and coconut oil in a small pot over the lowest heat. Allow the chocolate to cool slightly for a few minutes before dunking the patties.
  6. Remove the patties from the freezer and dunk them into the melted chocolate with a fork. Go quickly so the patties won't melt!
  7. Return the patties to the freezer until set, for about 10 minutes, until the chocolate coating is firm. Done, enjoy!

What you can do

Most of us can increase the percentage of vegetables on our plates or enjoy some all-vegetable meals while maintaining a balanced diet. Look for nutritious plant-based options you can substitute for meats such as beans, chickpeas and lentils, and also simple taste treats like grilled mushrooms instead of steak.

For regular meat eaters try cutting out 1 red meat meal each week.
