[Recipe] Earth-strong granola

I didn't choose the granola life, the granola life chose me

This is undoubtably one of my favourite recipes of all time. It's quick and easy, instantly gratifying (I tend to eat about a quarter of it before it makes it into my cupboard) and goes well with milk, yogurt and fruit.


1/2 cup desiccated coconut

1/2 cup rolled oats

1/2 cup almonds, roughly chopped or crushed

1 teaspoon maple syrup or honey

2 teaspoons coconut oil

other additions (depends what you like!) could be a handful of sunflower seeds, flaxseed, pecans or other nuts (macadamia or peanuts are yummy)

What to do

1. Mix all the dry ingredients together in a large bowl

2. Melt the oil and syrup in a small saucepan (or in the microwave) and add to the dry ingredients

3. Using your hands or a wooden spoon, mix the wet and dry together. It should be damp enough that you have little clusters of mixture forming (add some more oil or syrup if it's too dry)

4. Heat oven to about 180 degrees celsius

5. Spread the granola mix over a large, flat baking tray (you van use baking paper if you like) and cook for 10-15 minutes or until toast and golden. prevent the bottom layer from burning by giving the while thing a gentle shake halfway through cooking so that everything cooks evenly

5. Enjoy hot or cool with fruit, yogurt, milk or by itself
