​[Recipe] Chocolate Peanut Butter Mug Cake

The perfect individual sized chocolate cake!

It fits in a mug, it's vegan-friendly and will take you no more than 5 minutes to make. What could be better?

Well, some of our other desserts may come close, like these choc-orange raw cheesecake balls, or this chocolate mousse (made with avocados...seriously), but this mug cake is definitely a winner.

Ingredients

  • 3 tbsp plain flour
  • 2 tbsp cacao powder
  • 3 tbsp non-dairy milk (almond, soy, rice)
  • 2 tbsp brown rice malt syrup
  • 1 tbsp coconut oil
  • 1/4 tsp baking powder
  • 2 tbsp vegan choc chips
  • Large spoonful of peanut butter

Directions

Mix the flour, cacao powder, choc chips and baking powder together in a regular size mug (the kind you would use for a cup of tea).

Add milk, brown rice syrup, coconut oil. Mix everything together well.

Add a large dollop of peanut butter in the centre.

Microwave for 60 seconds. Check it, if it needs a little more cooking time or you prefer it more well-done, microwave for another 15-30 seconds (but be careful not to OVER cook, as it will turn a bit like cement in your mouth).

I prefer mine a little underdone and gooey, but each to their own.

Note: If you can't find vegan chocolate chips, buy any block of vegan chocolate and break it up into very small pieces.
