No waste recipe: Marinara Sauce to use up overripe tomatoes

They are a classic kitchen staple but once they start turning soft, the aren't is versatile… or are they? Here's a great and easy recipe to use up those overripe tomatoes, eat it straight away or put it in an upcycled jar in the fridge for a later date. Marinara Sauce Recipe Ingredients At least 6 Overripe tomatoes 1 can of tomato paste 4 tablespoons of sugar 3 tablespoons dried oregano 3 tablespoons dried basil Salt and pepper to taste 1 cup of olive oil 4 cloves of garlic minced . 1 tablespoon of salt Method:

  • Start by Blanching the tomatoes then blend peeled tomatoes in a food processor, compost the tomato skins.
  • Heat oil in large pan and add garlic. Cook garlic for five minutes until browned.
  • Add tomatoes and all other ingredients- simmer for 45 minutes.
