How To Make A Cauliflower Pizza Base

Cauliflower pizza is crunchy, light, and perfect if you're cooking gluten-free! We've workshopped this recipe so that it's fool proof and waste-free!

Cauliflower pizza base recipe

Ingredients:

1 Large head of cauliflower

1-2 eggs whisked (you can substitute in an egg replacer for a vegan option)

½ cup of finely grated Parmesan cheese (or ½ cup ground almonds for vegan alternative)

A pinch of oregano or dried Italian herbs

Method

Step 1.

Preheat your oven to 200°C or 400°F and begin to boil a medium pot of slightly salted water. If you have a pizza stone or tray then put this in the oven too!

Step 2.

Rice or finely grate your cauliflower. This can be done with the coarsest side of your grater or in a food processor. Detailed instructions can be found here.

Step 3.

Boil your cauliflower rice for about 5 minutes; remove from the heat and strain

Step 4.

Let the cauliflower cool so that it's ok to touch. Then transfer it to a clean tea towel and squeeze all of the excess water out (you made need to repeat this step a few times). This is so important if you want a crispy and crunchy base, so don't skip it!

Step 5.

Combine your eggs or egg substitute with the cauliflower, herbs, cheese, and a pinch of salt and pepper, mix well.

It's not going to look or feel like regular pizza dough, but trust me on this one!

Step 6.

Lay down some parchment paper and shape your pizza base. Transfer this to your preheated pizza stone, or straight to the oven if you aren't using one.

Step 7.

Bake for 30-40 minutes until the base is golden and firm.

Step 8.

Add your toppings and cook like you would a regular pizza!

Slice and serve immediately!
