2 Fab and Easy Holiday Leftovers Recipes

The Holidays are coming! and probably a lot of festive family feasts which means loads of leftovers...

After Christmas Day has come and gone, most of us are left with fridges packed full of leftovers.

It would be a shame to let this food go to waste, so here are two simple and quick recipes to turn your leftovers into a delicious meal that can be enjoyed on Boxing Day and beyond.

Up to 30% of food we buy is wasted, at an estimated national cost of $5 billion-plus a year. Reducing food waste is one of the simplest ways you can enjoy a No Waste Festive Season this year.

Summer Stir fry

A healthy way to use up leftover meat, seafood and vegetables is to throw all your ingredients (whether turkey, ham, pork, fish or prawns) into a wok with some summer vegetables for a delicious quick stir fry.

Here's a simple stir fry recipe to follow...

2 tbsp soy sauce 1 tbsp veg oil 1 tsp sesame oil 1 1/2 tablespoons oyster sauce Thumb-sized piece of fresh root ginger , peeled and grated Veggies (capsicum, brocoli, brown onion etc.) Leftover meat or seafood Stir fry noodles if desired

Directions

  1. 1. Put veg oil in pan. Stir fry ginger and harder pieces of veg for 2 mins.
  2. 2. Add noodles (if using) and stir fry over high heat until just cooked.
  3. 3. Add in leftover meat, seafood or veg with the soy & oyster sauce and sesame oil.
  4. 4. Cook for a couple minutes, then serve.

Boxing Day Omelette

The perfect Boxing Day breakfast this year is a hearty and delicious omelette using any leftover meat and vegetables.

You'll need...

  • 2 large free-range eggs
  • sea salt
  • freshly ground black pepper
  • a drizzle of olive oil or knob of butter
  • freshly chopped herbs (basil or parsley work well)
  • leftover meat or veg

Directions

  1. 1. Crack the eggs into a mixing bowl with a pinch of salt and pepper. Beat well with a fork.
  2. 2. Put a small frying pan on a low heat and let it get hot. Add olive oil or butter. When its hot, add your eggs and move the pan around to spread them out evenly.
  3. 3. When the omelette begins to cook and firm up, but still has a little raw egg on top, add the leftover meat or veg, and freshly chopped herbs.
  4. 4. Using a spatula, fold the omelette over in half. When it starts to turn golden brown underneath, remove the pan from the heat and transfer omelette on to a plate.
