I'm obsessed with Turmeric at the moment. I add it to pretty much everything from freshly squeezed juices to omelettes.
When I was asked to bring a dish for the 1 Million Women plastic-free brunch I thought about doing something creative and completely packaging free. And yes, with Turmeric.
This is a unique take on hummus with my beloved Turmeric and a bit of spice. It's a wonderful colourful dip, perfect with some freshly baked bread, or a bread bowl in this instance. Enjoy!
Ingredients:
- Fresh sourdough cob loaf
- 2 cups chickpeas (adjust this, depending on how much you want to make)
- Heaped tablespoon hulled or unhulled tahini
- Teaspoon Turmeric
- Garlic clove
- 1 fresh chilli (leave the seeds in if you like spice)
- Juice of 1 lemon
- 1/4 cup olive oil
- Salt & pepper, to taste
Method:
- Place all ingredients, except for the bread loaf, in a blender until smooth. If the consistency is too think, consider adding more olive oil or lemon juice.
- Cut 1-2 inches off the top of the cob loaf.
- Tear out the inside of the loaf, leaving only the walls of external crust. This should now resemble a bowl.
- Fill your bread bowl with the hummus.
- Arrange the leftover bread around the sides of the serving plate, to use for dipping. When this runs out, you can then begin pulling apart the bread bowl until it's all gone.
Talk about a packaging free delight!
