Activated Walnut Sun-Dried Tomato Pesto

Activated walnuts, sun-dried tomatoes, what a superb combination!

No cooking required, this pesto is delicious, nutritious and really easy to make.

What's the deal is with activated nuts?

Activating nuts requires a little bit of work and patience, however the reward is well worth it. Activation increases the nutrient value of nuts and boosts deliciousness.

Activated nuts are soaked in water and salt for a period of time, starting off the germination or sprouting process. They are then dehydrated at a low temperature.

Ingredients

1 cup Walnuts (soaked for 4 - 6 hours)
1/2 cup Sun-Dried Tomatoes (or oven dried tomatoes)
1/4 cup Olives
1 Tbsp Savoury Yeast
1 Clove of Garlic
2 Pitted Dates
1 Tbsp Olive Oil
Salt and Pepper to taste

Method

Step 1

Soak walnuts in water for 4 - 6 hours (do it before you go to bed at night)

Step 2

Add everything to the blender and give it a whirl!

Step 3

You'r done! Enjoy on an antipasto plate, in a pasta or as a snack with crackers.
