Raw Vegan Almond and Cacao slices

I was looking for a recipe to make another healthy snack to take to work, and as I don’t have a lot of free time in the evening, I wanted something that didn’t need to be baked and which I could make with what I already had in my pantry. I got really excited when I found a recipe for a No-Bake Hazelnut Power Slice, but I didn’t have all of the ingredients so I got inspiration from their recipe and made my own. It was absolutely delicious, everyone in the office loved it, even my boyfriend took some to work and he usually hates my vegan-health-food experiments. If you have some of the ingredients at home but not exactly everything that’s on the recipe, you can definitely adapt like I did and as long as the main ingredients are there, it should turn out just the way you like it. It only takes about 10 minutes to make it, and even though you should pop it in the fridge for a couple of hours to make it cold and crunchy, you can also eat it straight away, which is what I did! Enjoy! Ingredient list to make between 10 and 20 small slices: You’ll also need a food processor, a small mixing bowl and a tray.

INGREDIENTS:

-        1 cup raw almonds (or your favourite nuts)

-        ½ cup cacao powder + 2 tbsp for the frosting

-        ½ cup coconut oil + 1 tsbp for the frosting

-        2 tsp of a sweetener of your choice for the crust: coconut sugar (that’s what I used), agave syrup, rice malt syrup, etc.

-        1 tsb of your favourite liquid sweetener for the frosting: rice malt syrup, agave syrup etc.

-        1 tsp chia seeds

-        1 tsp flaxseed

-        1 tsp of your favourite nut better (I used an almond, cashew and peanut butter) (optional)

-        1 tsp cinnamon powder + 1 tsb for the frosting

-        2 tbsp water for the crust and 1 tsbp warm water for the frosting

-        Small handful of dried fruits such as goji berries, cranberries, raisins etc. (optional)

METHOD:

1)     Make the crust first. Blend the nuts in your food processor until evenly crushed.

2)     Add the cacao powder, the sweetener, the chia seeds, flaxseed and the coconut oil and the nut butter and blend until combined. You can also add a small handful of dried fruit or berries like goji berries, cranberries, raisins etc. if you like, and blend until combined.

3)     Line a tray with baking paper and cover with the mix you just made, press down firmly to turn it into a tight crust.

4)      Pop the tray in the fridge while you make the frosting.

5)     In a small mixing bowl, make the chocolate frosting. Combine the 2 tbsp of cacao powder with 1 tbsp  of warm water and 1 tbsp of coconut oil. Add the cinnamon and liquid sweetener. If it feels too thick, feel free to add a bit more water.

6)     Spread the frosting evenly on top of the crust.

7)     Pop in the fridge for a couple of hours, cut your slice into individual portions (I used scissors for this and it was really neat and easy) and store in an airtight container in the fridge for a week or so (but you’ll probably have eaten it all by then!)
