Holiday cooking fun for the whole family: Recipes from our friends at Love Food Hate Waste

These are all great recipes to reduce food waste, and would be an excellent meals to cook with your nana, mum or special lady in your life!

There are a lot of fun ways to include kids (and grandparents) in healthy cooking and use up leftovers at the same time. Create a family heirloom recipe! Here are some great recipe ideas from our friends at Love Food Hate Waste.

Pear and banana muffins

Delicious hot out of the oven or freeze for a later date.

15 mins preparation + 20 mins cooking

Makes 24

Ingredients

  • Olive or canola oil spray
  • 2 cups wholemeal self-raising flour
  • 2 cups white self-raising flour
  • 1 cup brown sugar
  • 2 eggs
  • 150 ml low-fat natural yoghurt
  • ½ cup orange juice
  • 1 large banana, peeled and chopped
  • 1 pear, cored and diced
  • ½ cup buttermilk or low-fat milk

Method:

This recipe contains 3 serves of fruit.

Preheat oven to 170°C. Lightly spray muffin trays with oil.

Sift flours, returning husk from wholemeal flour to the bowl, add brown sugar.

In a separate bowl mix eggs, yoghurt and juice.

Combine with the flour mix and fold through fruit and milk (you may need less milk depending on moisture in fruit).

Do not over mix.

Spoon mixture into trays.

Bake near the top of the oven for 18-20 minutes.

Turn onto a wire rack to cool.

Variation

Any unsweetened fruit juice maybe used. Use apples, blueberries or other firm fruit to vary the flavour.

Make 12 muffins and 1 loaf, by spooning half the mixture into a greased loaf tin. Bake the loaf in the middle of the oven for 35 minutes, or until firm and golden brown. Bake near the top of the oven for 18-20 minutes.

Hint

Wrap muffins individually and freeze for a lunch box snack.

Apple jaffle

A tasty treat that’s quick to make. Try it for breakfast or afternoon tea.

10 mins preparation + 5 mins cooking

Makes 4

Ingredients

  • 1 green apple
  • 125g container low-fat ricotta cheese
  • 1 tablespoon sunflower seeds
  • 2 tablespoons currants
  • ¼ teaspoon cinnamon
  • 8 slices sultana bread

Utensils

  • Peeler
  • Grater
  • Measuring spoons
  • Bowl
  • Wooden spoon
  • Sandwich maker or jaffle iron
  • Non-stick cooking spray

Method

Peel and grate apples.

Put apple, ricotta cheese, sunflower seeds, currants and cinnamon in a bowl.

Stir well.

Spray the surface of the sandwich maker or jaffle iron with non-stick spray.

Place the slices of bread in the sandwich maker to form the sandwich bottom.

Top with apple mixture and cover with another slice of bread.

Toast for 2-3 minutes or until golden brown.

Ham and Veggie Slice

Veggie slice is great to have with steamed vegetables or a garden salad.

15 mins preparation + 30-40 mins cooking

Serves 4

Ingredients

  • 6 eggs
  • 60g plain flour
  • 1 cup zucchini, grated and drained
  • ½ cup sweet corn kernels or 225g can, drained
  • 1 cup grated carrot
  • ¼ cup chives, chopped
  • 100g lean ham, chopped
  • 50g grated reduced-fat cheese

This recipe contains 7 serves of vegies.

Method

Preheat oven to 180°C.

Beat eggs and flour together until smooth.

Add zucchini, corn, carrot, chives and ham and combine.

Pour into a dish lightly sprayed with oil.

Top with cheese.

Bake for 30-40 minutes until set.
