This is the perfect weekend for a bit of clean, healthy comfort food. This recipe has no dairy or eggs (vegan) involved, so it's a treat that will also help keep your carbon footprint low!

Tripple choc chickpea cookies

  • 1 can of chickpeas
  • 300 g of oat flour
  • 1 teaspoon baking powder
  • 2 tablespoons ground flax
  • 2 tablespoons almond milk
  • 3 + 1 tablespoons melted coconut oil
  • 2 teaspoons almond essence
  • 1 teaspoon vanilla essence
  • 150 g cane sugar (or stevia equivalent)
  • 100 g raw cacao powder
  • 80 g dairy free chocolate chips.
  • 1/2 teaspoon salt

Method:

1. Rinse and drain the chickpeas - preheat oven to 175°C. Put chocolate chips aside.

2. Place all the wet ingredients (including chickpeas) and sugar into the blender, mix.

3. Add all the dry ingredients in a bowl, whisk together and then gradually add into food processes or blender.

4. Take mixture out of blender and slowly mix in chocolate chips.

5. Shape them to the size you like, sprinkle with salt and cane sugar and bake for 15 minutes.

6. Take the cookies out and ENJOY!
