SEASONAL RECIPE: Pea, Mint, Parmesan and Yoghurt Dip

Simple food can be healthy, fresh, tastes delicious and is less time intensive in the kitchen. There's no doubt about it - there are just too many things you can whip up with just a few ingredients. This month we're all about showcasing recipes that pack-a-punch using seasonal produce and around 5 or so ingredients.

Less time in the kitchen means less energy expended, and by making sure the few ingredients you need are seasonal makes for recipes that are better for the planet. Less can really be more in the kitchen...

Pea, Mint, Parmesan and Yoghurt Dip

This dip is an absolute winner for all occasions. Have it as an afternoon snack with some crude veggies, serve it as an entree for guests at a dinner party, or pack it for a picnic lunch in the park. You can make a batch and store it in the fridge to eat during the week (if it lasts that long). I know whenever I make this recipe it disappears pretty fast. I love the freshness of the mint and yoghurt combined with seasonal peas and a little Parmesan.

This could also make great topping for a salad if you were looking for a more substantial dressing, or even as a side for meals that are complemented by yoghurt like Indian spiced foods.

Ingredients:

  1. 1.5 cups fresh peas
  2. 1/4 cup plain Greek yogurt
  3. 1–2 handfuls of fresh mint, leaves picked
  4. 1/2 cup Parmesan cheese
  5. 1 tablespoon olive oil

Directions:

  1. 1. Drop the peas in a small saucepan of boiling water and cook with the lid on for 4 minutes, until tender. Drain and rinse under cool water.
  2. 2. Reserve 1/2 cup of whole peas and put the rest in a food processor along with all the remaining ingredients. Process until smooth and creamy.
  3. 3. Add the reserved peas just to combine quickly (so it's still a bit chunky).
  4. 4. Season to taste with a bit of salt if necessary. Serve with crude veggies of your choice.

Simple and delicious!
